Veal Rollatini
A savory, indulgent dish bursting with earthy flavors. Rich and flavorful, it combines salty prosciutto and tangy Parmesan, layered with Sabatino Black Truffle Sauce. Pan-fried in butter and finished with an extra sprinkle of Parmesan for the ultimate indulgence.

Method
- Pound the chicken cutlets until they are thin and even.
- Layer 1–2 slices of prosciutto on each cutlet, spread a layer of Sabatino Truffle Sauce, and top with freshly shaved Parmesan cheese.
- Roll the cutlets tightly and secure with kitchen twine.
- Heat a skillet over medium heat and coat with butter.
- Once the pan is hot, add the rolled chicken and sear on all sides until golden brown, about 10–15 minutes.
- Remove from the pan and let rest for 3 minutes.
- Finish with a shave of fresh Parmesan and serve immediately.
